The Consortium of Parmigiano Reggiano protects and promotes one of Italy’s most iconic cheeses. Produced exclusively in a defined area of Northern Italy following strict traditional methods, Parmigiano Reggiano represents centuries of craftsmanship and is recognised worldwide as a symbol of Italian gastronomic excellence. Representing this heritage at Maestri del Gusto, Caseificio Cavola 993 produces Parmigiano Reggiano in the Reggio Emilia Apennines at 900 metres above sea level, near the Tuscan-Emilian Apennine National Park. In this protected mountain environment, fields are cultivated without chemical fertilisers or pesticides, producing natural forage that feeds the dairy cows and results in particularly pure, high-quality milk. This fully mountain-based supply chain - where pastures, cattle breeding, milking, cheesemaking and ageing all take place at altitude - allows the dairy to produce a Parmigiano Reggiano with distinctive aromatic intensity, granular texture and depth of flavour.
